I think I'm on info overload at the moment!

I'd like to add an RSS feed - any suggestions?

I'd also like to add acceptance of Terms & Conditions and ask users where they heard about us as required fields when completing an order. Again any suggestions would be welcomed.

RSS feeds are generated automatically using the latest news features.

Make a new form that only has one field asking where they heard about you, then I've seen somewhere in the config or something additional forms to complete upon ordering, just select your new one.

If you have filled out a terms and conditions page, link to it in the site config and it automatically makes the customer have to accept to proceed to payment.

Correct, you can add the name of the T&C page you've created in the Page Manager - i.e. terms.html - via Site -> Configuration: Order tab.
